February is American Heart Month. Coburg Village, Executive Chef, Chad Viall, shares an easy heart-healthy salmon recipe that will not only melt in your mouth, but is sure to melt the heart of your Valentine! It's delicious and it’s healthy, too!
2 Servings Ingredients:
● ½ Tablespoon Olive Oil
● 2 - 6-ounce Filets of Salmon
● 2 Garlic Cloves, thinly sliced
● 1 cup Cherry Tomatoes
● 1 Shallot, thinly sliced
● ¼ cup Fresh Basil, thinly sliced
Instructions:
1. Preheat Oven to 400F
2. Heat an oven proof skillet or cast-iron pan over high heat. Add ½ Tablespoon of olive oil to the pan and swirl to coat. Sprinkle salmon filet with salt and black pepper. Add the filet to the pan, presentation side down, and sear for 3 minutes.
3. After 3 minutes, flip the salmon & place the pan into the oven until the salmon is the desired doneness, about 2 minutes for medium-rare and up to 6 minutes for well-done, depending on the thickness of your salmon filets.
4. Remove salmon from the pan to rest and return the pan to medium-high heat, leaving the oil and tomatoes in the pan. Add the shallot, and sliced garlic, sauté till tender, stirring to combine with the tomatoes. Stir in the sliced basil & season to taste with salt & pepper if needed.
5. Plate up the seared salmon filet & top with cherry tomato basil topping.
